I have invited my good friend Paul Fields, an acclaimed chef from California’s Napa Valley to come along and prepare gourmet meals, entertainment, and exclusive cooking events for us to enjoy. Along with Paul, I’m bringing Ted Barrett, the Head of Major League Baseball Umpires. Ted, an ordained minister is going to lead our group in devotions and tell stories that only someone with a front-row seat to the big leagues can tell. Comedian Jonnie W. will also be joining us, sharing hilarious stories that will have us rolling in our seats.
And of course, music. I have several concert events planned that we will experience amidst stunning ocean views and the tropical beauty of the Caribbean.
Join me, Paul, Ted and Jonnie as we cruise to Amber Cove, San Juan, St. Thomas, and Half Moon Cay. Every day will be packed with awe-inspiring moments, and we’ll experience all of them from the luxury of Holland America’s elegant Nieuw Statendam.
I’m really looking forward to hearing Ted tell stories about baseball and faith, laughing with Jonnie and putting on cooking clinics with Paul. I can’t wait to perform songs from Rescue Story and Chain Breaker, along with a few other surprises.

He has been the home plate umpire for some famous baseball games including David Cone’s perfect game for the New York Yankees against the Montreal Expos on July 18, 1999. Ted has been involved in ministry for many years and earned a master’s degree in biblical studies and later a doctorate in theology.

Paul Fields’ professional experience can be best described as diverse. For the past 25 years, he has resided in Napa Valley, working as an ironworker, correctional officer and now a decorated chef. Living in wine country, Paul has developed a deep appreciation for quality food and wine. That appreciation convinced him to pivot and pursue a culinary career. Over the years he has developed a broad skill set working for Silverado Country Club, Mandarin Oriental Hotel in San Francisco and the Pebble Beach Company and Oenotri (one of the Bay Area’s top 100 rated restaurants.) He found his niche creating dishes from fresh, local ingredients when he was offered the opportunity to become Executive Chef at Napa’s award-winning Inn on Randolph.
In 2016 he started his own business, Twenty Below, a catering business focused on creating multicourse meals for intimate dining experiences across a wide range of Napa Valley wineries. His passion for helping others and his focus on making food are a foundational part of what his life is all about. The unwavering support from his wife, Julie, inspires him to keep up the pace.
